We're porting some assets over to Stellaris at the request of many fans. We do not plan to attempt any balancing or massive total conversion for Stellaris, we're just letting you play with the best looking Halo ships outside of 343's studios.

Stellaris is one of the best games even without mods...
It has a lot of potential but it is very incomplete right now.
Really big mods will make that game absolutely amazing. It's pretty solid on it's own, though has a bunch of ideas incomplete.

The SoaSE mod is still our primary project. We are not switching to Stellaris, just branching out.
Will we be able to see most, if not all, models of ships currently in SotP?
The last line of description got me little worrying about Halo contents usage rules outside non-'Halo total conversion' mods or universe.
Some. Stellaris doesn't have a ton of ship slots.
THAT'S very true Unikraken :P I've seen it for myself :/ but you can use different ship parts in order to make a another ship but it would still be the same type of class
