There could have been 700 UNSC ships, what took them out was the destruction of the orbital Super MAC's due to boarding parties, not to mention the orbital troop drops numbering in the thousands.

I don't think human ships are ugly. I actually like them best. I hate the Covenant designs. To organic looking. I like the designs of the UNSC. They actually look usable.
And Humans are not Forerunner. The Forerunner merely thought of Humanity as special and named them the heirs to their empire. So the designs of our structures would not eventually become theirs. This is Bungies description of the designs.
