I think the cockpit should either be shiny or transparent with a pilot inside. Black just doesn't look right.

I have a question:

You see on the mod banner, it shows a X-Wing in a locked position with a pilot inside, is that the same model being used here? If so, why not include the pilot?

No, no, it's a different model. The one on the banner is high-poly, this one here is EvilleJedi's XJ-Wing with our X-wing skin.
I don't see a point in adding a pilot... This is a kind of detail you can hardly notice in-game.

I'll notice it when I zoom in to see a dogfight. Details like pilots inside really help it feel less like the half-assed design Petroglyph did (just look at the vengeance frigate, when it cloaks there is a piece of the normal mesh sticking out of the cloaked mesh, and the cloak mesh goes over the mass drivers...even if they've broken off from being destroyed.) It especially feels weird that, on land, both the Rebel dish turrets and the Pod Walkers don't have gunners at all (the models however do have the gunner's seats.) The little details make a big difference the moment anyone decides to pay attention to them.

But they can also lag the game for someone who doesn't pay attention to them.

I will think about the gunners for turrets though.

This is not X-wing, it's XJ-wing, they don't have R2 units on-board.
