Great work here, the final effect is incredibly smooth and a very interesting way of going about solving this notepad feature. I love reading others' Unity code, so thanks for including some snippets as well. And so well-documented even! I wish I was that thorough.
The one thing I notice is something I'm also dealing with, these magic numbers of waiting (ie, 'yield return new WaitForSeconds(.33f)'). I've got similar solutions for animation in what I'm working on, but it just seems messy. Not sure what other option there is though.

Some helpful tips on naming here, a good read. I agree to definitely stay away from anything controversial unless that's your target audience [and even then beware of backlash]. I think a couple additional things to consider with naming:
1. Be aware of legality issues with your name stepping on other's toes. This is where originality and made-up portmanteaus can probably help.
2. Similar to above, people use Google/search engines as second nature. If your game's name is generic, you'll be buried at page 10. Originality or even making up new words helps you in search engines, legal issues, and of course, domain names.

Great post mortem of your launch, these are really invaluable for all developers. I think in general, the public has a sour taste for most early access games and it's a real shame. Add in the market saturation and it's a recipe for disaster unless you have that massive hype train in your court. And look what happened with No Mans Sky anyway? Massive sales and mediocre ratings. Unfortunately when it comes to really selling an indie game, it seems that marketing is MORE important than depth. It sucks to have to take people away from such a small team for promotion, but just look at the successful games. High sales, mediocre reviews, excessive marketing. Look at Ark even, getting slammed for releasing DLC before their finished product. Doubt it will hurt their bottom line one bit.
