Yeah, that's possible. The extra planes won't have any animation or effects, and its center of rotation would be tied to the player aircraft itself.

The problem is, many planes share the same weapon models, so changing a weapon model will often affect every plane that uses them in their loadout.
For example, replacing R-60 (Standard missile for Russian aircraft) model will be reflected on every Russian aircraft, some ground units, and every single NPC aircraft including US, EU, and Japan types.

Wiseman F-15C files have f16c in folder name instead of f15c, which is probably why the mods won't load.

The pilot data should be kept somewhere in game files. Problem is the game files are obfuscated, making inspection impossible unless conversion method is found that makes them readable.

It depends on how the game assigns model type for pilots, which come in four variations: Pilot, Drone, Mihaly, and Mihaly's drone (with no side lights).

Sorry for the late reply (gg ModDB notification), but Alpha Mask should work in coloring the body while leaving the rest alone. Overlay the mask over the texture and delete anything in the black area.
NPC textures for new enemies are already in. Folder structure indicates that player version will be released eventually, probably after all 3 missions are out.
Yeah, the game has no setup whatsoever for alternative special weapons textures, so the method used to split aircraft textures will not work there.

It appears that replacing DLC content textures need "_P" added to the end of .pak filename (Example: Modname_P.pak). I just tried this and ADF-11F texture mod loaded successfully. Source tweet: Twitter.com
