The first one that comes to mind Is the couple from "toradora!"

Simply because of their level of understanding at the end. They just seem to have such resolve about their love with each other that they could make such difficult decisions without their feelings wavering in the slightest. It's simply mindblowing how well the two just fit together at the end even if the beginning didn't start off that way.
