I didn't know knight was a race. I'm jk, but I think you should allow the player to decide their good-evil alignment. I personally love the d&d good evil table
If you are referring to Perks, although some are set up based on your race, you still can change them when leveling up (with a high cost of Ability Points) as you please. It is not impossible to see knight heroes leading undead in skirmishes, it's just that most knights end up being good by nature, culture and education (i.e. how they are grown).
