could you use this with say a randomization generator to make everyones skin shade look a little different, like real ppl?
Yea im sure that can be done... right now its set up for the artist to tweak... this just shows the customization and differences that are open to the art team.
the zombie skinshader looks... not good
we wont ever be doing zombies... its just to show how we can manipulate the shader... nothing more than that.
If we were going to make a zombie he would look like a zombie :)

Just don't make the skin glow like in High Diffusion and Zombie!
Might just be unwrapped uv space blurring + post bloom?
Personally, i think 2 layered rendering for skins would be far more realistic.
