I was wondering, what is the policy on what can and can't be used from the original Mass Effect games? Does Bioware/EA care if some of their assets are used?

Basically, sounds and music are okay; anything else is probably also fine, but usage of assets such as unit models and whatnot would make MEU grossly unstable due to how many polygons the models use, and regardless, we find it much more challenging (and fun) to attempt to recreate the art assets ourselves. ;)

I was thinking that was the reason for the custom models! Still curious though, is all of the in-game music out of the games? I don't recognize a few of the tracks.

Sorry for the late reply; forgot about it.

Most of the in-game music is out of the trilogy. Some music - namely some of the Collector music - is from the film, Mass Effect: Paragon Lost, and much of the Evolved Geth's music is from Far Cry 3. Additionally, many of the shell music tracks are previously-unreleased original compositions for Mass Effect from Sam Hulick who's kindly uploaded them to YouTube, and some of them are simply random, original compositions by various individuals.
