Rebellion aims to create a realistic, multi level strategic war simulation based on the second world war, and combine it with the original trilogys feeling. You'll be managing vast parts of the Galactic Empire, and eliminate it's many adversaries, while keeping order and piece by supressing pirates and rebels, or you'll be fighting a war of attrition by leading the Alliance to Restore the Republic in a guerilla war against tyranny, spreading rebellion and hope across the galaxy.

IT'S A LEGITIMATE STRATEGY
So the logic goes:
Hyperspace travel is not instantaneous.
In The new hope, it's very clear the trip from Tatooine to Alderaan takes some time. How much? Well, enough for Luke and Obi-wan to be friends, share stories and for Luke learn a thing or two. Furthermore, the difference between the Falcons and the Death Stars traveling time differs so much, that the Rebels got time to analyze the freakin Death Star schematics (considering they started almost at the same time to Yavin).
Now what's the Alliances greatest advantage? Sneak attacks and commercial raids. It's not unlike U-boat warfare, but this time with starfighters and other small craft.
Considering hyperspace travel takes something from hours to days to maybe months, imagine yourself into the boots of a starfighter pilot. You've got a tiny cockpit, no movements, no toilet, no nothing. Mission time could realistically not exceed 16-24 hours. This means you either have to have a large capital ship with hangar as a mission craft, or a starfighter base near the target. We know the rebels do not have many capitals ships or bases.
Enter the starfighter backpack (TM). It's small, cheap, expendable, needs only 1-4 crew members, can carry all sorts of supplies, fuel and ordnance. It's ideal to complement starfighter raids. It can also carry other ****. It's like a trusty supply truck. IN SPACE. It's the greatest Alliance support ship!

Perhaps they functioned as facilities management?
GR-75's are a transport ship, so they could be carrying resupply parts for star fighters so that during battle, damaged star fighters could be repaired and redeployed.
The transports could be carrying extra bacta canisters, kolto, weapons ordinance, -etc. They might even be able to provide refresher services for pilots.
Could they also function as a very light carrier for one or two star fighters?
For 3 (with umbilical connectors), as you can see on the picture.

I've long entertained the notion of the GR-75 serving as a "pocket carrier." My vision is slightly different through, with the transport stripped of its cargo containers (they're supposed to be modular, after all) in favor of a small hangar instead. Your interpretation probably makes more sense though, as my rendition would leave precious little space for the ship's power supply and maintenance/living facilities.
Similar thoughts here. By pulling out some containers from the lower deck, and putting in some force fields, a single sort of flat, alliance type fighter could fit in for maintenance and rearmament without sacrificing the rest of the load.
