During the Dominion war and the included mass panic for Changeling (Leaders of the Dominion that can change into any form, including any person) incursions admiral Leyton attempted a coup d'etat by invoking martial law on Earth.

Long story short, Sisko gets imprisoned by Leyton.

The Defiant was en route to assist Sisko with a witness that could testimony to Leyton's plans.
However Leyton, being an admiral orders the USS Lakota (The Excelsior-class vessel in the screenshot) to intercept the Defiant and informs them that the Defiant has been captured by the Dominion.

The rest is history:

That happened before The Dominion War.

It was during the cold war with the Dominion, when the Changeling's were attempting to divide the Alpha Quadrant races in preparation for their invasion plans.

I want to add that it wasn't an official starfleet mission but a special unit who was misinformed by Leyton to fire on the Defiant

It was quite common in Kirk's day, from what I hear. Mainly because of Kirk himself.

Thankfully, in Kirk's days the Enterprise was apparently the only ship of the whole starfleet (if you watch TOS). So no problem there

Yeah because in the show the Defiant is depicted as being barely bigger than the Excelsior's bridge.

I think you're exaggerating a bit there, unless the Lakota was for some reason depicted as having a HUUUUGE bridge.

Keep in mind that the Defiant is only a few meters away from the Lakota's hull here, firing point-blank into her shield grid.

To me it looks like the Defiant is at least 300m away, but you may be right. We've been watching DS9 start to finish and one thing I have noticed is that the size of the Defiant seems to remain relatively inconsistent.

Nah, it's skimming the Lakota's shields there. Real close range, knife-fight starship combat. :)

But yeah, inconsistencies like that are common in Star Trek, and in Sci-Fi in general.
