More meaningful quests perhaps? less Fetch & Fight.

Revamped vanilla dungeons: more clutter, FX and better lightning, just enough to give each one its unique feel.
Time to overhaul the Tribunal expansion as well.
Add in more food-type things like the grilled variation of some items. Tomatoes, potatoes and the likes. Just more alchemy fun for everyone with that.
Why not throw in some Mana regeneration?
I noticed that if you want to play mage it is barely impossible as your mana goes away in just a few casts. Also leveling up magic skills is quite hard due to not having mana to practice spells.
modularity. There's no reason to have to choose between Rebirth and pretty much every other mod ever made. It would be a great convenience to be able to use say, new weapons/armor without the landscape edits or whatever.
An OpenMW bundle ;)
