So will the mining ships (the ones which dock with this) be the hoppers from halo wars?

The current trade ships will do this, since ore is cargo. The trade stations will be using (eventually) the transport ships you protect in Halo Reach.

Description

The Springhill-class mining vessel will serve as the UNSC's orbital refinery in Sins of the Prophets. This structure is used to enhance the yield of your titanium and deuterium mining operations in the war against the Covenant.
