Yes, this is unfortunate and probably a design flaw of the UI. I'm not sure how to fix this yet, but for now you can access the Stellarpedia (thats the Book & Star Icon right to the top bar), click on "Research" there and then on the tech you want to see the next unlock of.

No, that is perfectly fine. You can (and should) build ships that are significantly larger than 8 if you want to stay competitive in this mod. Don't get a wrong impression about the scale because of the suggestions in the blueprint tab (like Battleship, Huge Star etc.) - you can build ships as large as you want, really. Just click on the line, enter a figure you see fit and hit enter. All the stats will automatically adapt to the new scale.
