He learned from Coach to fly.
So Coach randomly came to teach Altair how to fly...

Coach had to teach Altair how to swim. It will be better for him.
Altair knows how to swim. It's just a glitch in the Animus that didn't let him swim. The old fart was too lazy to fix it.
