Preferences are preferences, it's actually pretty simple, go into the "C:\Program Files (x86)\LucasArts\Star Wars Battlefront II\GameData\addon" folder and delete the "ME5" folder, that should get rid of all the UI changes, maps, etc.
Doesn't change the main menu music back, though... Wouldn't mind knowing how to fix that whenever I just want to completely "switch it off" once in awhile...
