Actually Star Wars isn`t "black and white". It just follows the Jedi and Republic in comic books and movies and TV show therefore you see things in their point of view. If the Sith had been more closely followed in the movies ect. then we would see it through their point of view. We see the Star Wars universe through the eyes of a Jedi (mostly) therefore they shall say "Sith are evil" ect. therefore making readers/watchers think "Sith are evil/CIS is evil/Empire is evil" ect.
