i dont know of any that use it in production,  though this is something you wouldn't really know unless you were on their dev team,   

i will be using C# in my game  (once i find a good C# coder)  its a simpler language to deal with than C++

Not sure about Mods, but Unity 3D uses C#.

Minecraft uses Java (the language that microsoft was trying to replace with C#)
so its not entirley out of the question that it would be used in production, aulthough probably not for any X-platform games or ones ported to console

I know of a few (Terraria, Rocket Riot), do a google for released xna games and you will find some more,

Unity 3D is using C# programs . I found c# ( csharp.net-informations.com ) is the best and easiest language for developing games.
